Recipe: White Chocolate Spotty Cakes

I'm back to work today, so yesterday I spent my last day off reading, drinking tea and baking cakes. I was feeling a little uninspired and didn't have the funds for anything fancy, so I eventually settled on white chocolate spotty cakes.



I used the recipe from BBC Goodfood, but was lazy adapted the recipe and ignored their sponge suggestion and just used my usual recipe and decided to make individual cakes instead. Lots of the comments suggested the BBC sponge was a bit troublesome anyway, but it did sound delicious! I used their recipe for the frosting  though (I halved it so I'd have the right amount for about 16 cupcakes) and though it was delicious,  I'll definitely add more chocolate next time as there just wasn't quite enough flavour. I did forget to leave it to chill though, so that might have been something to do with it...



I'm also quite pleased with my cake stand from Home Bargains - it might be cardboard but the design is really cute and for 69p I think it's great! My local store had quite a nice selection of cheapy baking supplies actually, definitely worth a look!

Overall: Not a masterpiece and not the best cakes I've ever made, but a little bit of work on the icing and they shouldn't be far off! What are your favourite recipes?

P.S. Don't judge me too harshly for my appalling icing skills (or lack of)!
